Stir Fried Shrimps with Green Peas and Celery

This is a chinese stir fry that is quite a versatile dish since you can add other vegetables to suit your taste.  It’s usually the same rule for most stir fried dishes. Lazy chinese!

Ingredients:

  • 15-20 Shrimps (fresh or frozen)
  • Green peas
  • Celery – 2 stalks
  • Oil
  • Green onions – one stalk
  • Garlic
  • Sugar
  • Salt
  • Chopped ham (optional)
  • Mushrooms (optional)

Seasoning:

  • One egg white
  • Pinch of Salt
  • Pinch of Pepper
  • 1 teaspoon of Sugar
  • 1 teaspoon of Cornstarch
  • dash of Sesame Oil

Chop green onions and garlic, slice mushrooms and celery into one inch segments and set aside.

Rub shrimps with salt, then rinse with ice water until colour change to semi-transparent.  Drain and put in fridge for one hour.  This step helps maintain the shrimp’s ‘crunch’.

Mix shrimps, egg white, and all the seasonings.   Put back into the fridge.

Stir fry celery and mushrooms over high heat.  Add shrimps and stir fry for 2 more minutes (it shouldn’t be fully cooked). Set aside.

Heat oil, add garlic, green peas and sprinkle with 2 tablespoons of water.  Add salt and sugar.

Add shrimps and ham (if you have any) last and cook for about 3 minutes.  Do not overcook the shrimp as it will become rubbery. Plate.
