Easy Peasy Pineapple & Colour Pepper Asian Salad

Since Patch made a heart stopping dish to a summer BBQ, I decided to make something light and healthy to balance it out.  I had some frozen pineapple chunks in the freezer that was meant for the original plan of making a punch but the idea of bringing a bowl of hot punch in the scorching sun didn’t seem feasible.  So I looked up pineapple and salad and got different variations of this salad – changed some of the ingredients.

Ingredients:

  • a can of pineapple chunks
  • 1 each of red, orange or yellow bell peppers
  • 3-5 roma tomatoes
  • 1 cucumber
  • sliced white mushrooms (optional)

Sauce:

  • 3 cloves of minced garlic
  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon mirin (optional)

Chop the vegetables into bite size pieces. Toss and mix in salad bowl.

Mix all the ingredients in the sauce together. Let sit in the fridge for 10 minutes and serve.
